Sweet potatoes contain beta-carotene, something the body converts to vitamin A, which keeps skin smooth and is thought to prevent against sun damage. Its large, starchy, sweet-tasting, tuberous roots are a root vegetable. Besides simple starches and beta-carotene, sweet potatoes are rich in complex carbohydrates, dietary fiber, vitamin C, vitamin B6, manganese and potassium. Sweet potato varieties with dark orange flesh have more beta carotene than those with light-colored flesh.
